Best of the best, the premium quality saffron consists solely of saffron plant stigma threads cuts to same length, with no yellow/orange part of the stem and absolutely no crumbs.
High quality saffron threads with no crumbs. Cut longer, it contains occasional orange/yellow portions of the stigma.
“Top of the flower” in Persian, sargol consists of the red stigma tips only. Strongest colour and aroma unfortunately also means broken threads and many crumbs.
Inferior trim containing lot of the “no value” orange/yellow portions. This cheapest trim is ultimately false economy as you need significantly more to achieve the typical saffron colour, aroma and flavour.
WHY IS IT SO EXPENSIVE?
Each saffron crocus flower is handpicked and the stamens pulled out. True saffron is only produced from the Crocus Sativus bulbs that are expensive in itself to buy
- To produce 1000 grams of Saffron takes about 150,000 flowers
